Thanks Dr. Taylor for checking that out. To be quite honest, that simply sounds like a &quot;protecting my backside from legal liability&quot; email from US Wellness, which is quite understandable. But unless US Wellness is making something other than genuine pemmican, in which case we shouldn&#039;t be buying it all, then their product will last far longer than what they told you.</description>

The difficulty is the USDA food regulations won&#039;t let a producer sell the beef unless it has been heated above a certain temperature. But it is not an unsurmountable barrier. I know most people will not make their own so it would be nice to have a foolproof pemmican product that could last for many many years.</description>

As for adding Vitamin C, I don&#039;t think any of those links will be helpful. Pemmican in particular and an all meat diet in general have been shown to provide everything the body needs without having any appreciable amounts of vitamin C. You might want to read my series of posts by Stefansson describing the Eskimo/all meat diet.
